One day at work, a colleague asked me if I’d had lunch or if I’d eaten anything. I told her I’d brought my own lunch. She then asked what I had, and I told her it was egg stew with rice. Her reaction was not very positive. I was surprised and asked why. She explained that she didn’t like eggs because of German egg salad. She thought it was similar. I showed her a video of Ghanaian egg stew and she was keen to give it a go.

Egg stew is a popular dish in Ghana, celebrated for its ease of preparation and vibrant taste. Despite its simplicity, it’s packed with richness, making it a household favourite among many Ghanaians.

Although both Ghanaian egg stew and German egg salad feature eggs as the main ingredient, they reflect the unique ways in which different cultures incorporate eggs into their cuisine. Ghanaian egg stew is a hearty, flavourful dish often shared among family and friends, while German egg salad offers a cool, creamy option perfect for light meals or gatherings. Together, these dishes highlight the global appeal and versatility of eggs.

Ingredients

  • 4 eggs
  • 2 onions
  • 1 red paprika
  • 1 carrot
  • 2 chopped tomatoes in a can
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika powder
  • 1 teaspoon oregano powder
  • 1 teaspoon ginger powder
  • 1 teaspoon basilikum powder
  • 1 teaspoon chilli powder
  • Vegetable Oil
  • Salt to taste

Instructions

  1. Cut the vegetables:
    ⦁ Cut all vegetables into small pieces
  2. Prepare the spice mix:
    ⦁ Add all the spices into a small bowl and mix them well
  3. Cook the stew:
    ⦁ Heat the oil in a pot over medium heat and add the sliced onions. Stir and let them sweat for a minute, then add the canned tomatoes.
    ⦁  Add the mixed spices, stir and leave to simmer down for 8 minutes. Add salt.
    ⦁ Break the eggs and pour them on top of the stew. Turn the heat down and let it cook for 2 minutes with the lid on the pot.
    ⦁ Stir the stew. Add the carrots and let it cook for 2 minutes, then add the paprika as well and let it cook for another 2 minutes.
    ⦁ Cook the rice
  4. Serve:
    ⦁ Serve the steamed rice and egg stew. You can garnish the meal with a bit of parsley.
