For a long time, I didn’t dare to bake a whole fish at home. I was worried that I wouldn’t succeed. One day, a colleague who goes fishing regularly offered me one of his freshly caught trout, and I finally ventured to make my first baked fish. Baked trout can become very aromatic and crispy in the oven and goes excellently with vegetables and rice. I was glad and surprised at the same time by how good the baked trout turned out. It was clear to me that I would write down and repeat this recipe. By the way, I also told my colleague about it and he was very happy.

Ingredients

For the Trout and Marinade:

  • 1 whole gutted trout, cleaned
  • 3 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon ginger powder
  • 1 teaspoon chili powder
  • 1 teaspoon curry powder
  • 1 teaspoon tandoori powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt to taste

For the Vegetables:

  • 1 large carrot, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 large onion
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the Marinade:
    ⦁ In a small bowl, combine the olive oil, garlic powder, ginger powder, chili powder, curry powder, tandoori powder, dried thyme, and dried basil. Mix well until all the spices are thoroughly combined.
  2. Marinate the Trout:
    ⦁ Wash the trout  and pat it dry with paper towels.
    ⦁ Rub the trout inside and out with the spice mixture, ensuring an even coat. Sprinkle with salt, and add olive oil.
    ⦁ Let the trout marinate for at least 10 minutes, preferably up to 2 hours in the refrigerator.
  3. Bake the Trout and Vegetables:
    ⦁ Preheat your oven to 190°C (375°F)
    ⦁ Place the marinated trout on a baking sheet lined with parchment paper or foil.
    ⦁ Bake in the preheated oven for 15-20 minutes.
    ⦁ In the same bowl with the rest of the paste, toss the carrot, red, green, and yellow bell peppers and onion.
    ⦁ Spread the vegetables in an even layer on a baking sheet and bake it with the fish for another 10-15 or until the fish flakes easily with a fork and the vegetables are tender and slightly caramelized.
  4. Serve:
    ⦁ Carefully transfer the baked vegetables to a serving platter.
    ⦁ Arrange the baked trout around the vegetables.
    ⦁ Serve with a side of steamed rice or roasted potatoes for a complete meal.

Tip: You can also wrap the trout and vegetables in foil to create a steam packet for an even more moist and flavorful dish.
